Oriental chicken noodle broth Recipe

  • 1 tbsp olive oil
  • Âź onion, chopped
  • 1 garlic clove, chopped
  • 1 red chilli, sliced
  • 150ml/5fl oz hot chicken stock
  • 75g/2½oz chicken breast, cut into strips
  • 50g/1oz ready-made egg noodles, cooked according to packet instructions
  • 2 spring onions, chopped
  • handful bean sprouts
  • salt and freshly ground black pepper
  • 1 tbsp sesame seeds
  1. Heat the olive oil in a medium saucepan over a medium heat. Add the onion and cook for 2-3 minutes, until softened.
  2. Add the garlic and chilli and cook for another minute.
  3. Add the chicken stock and chicken breast. Bring to the boil, then reduce the heat to simmer for four minutes, or until the chicken is completely cooked through.
  4. Add the noodles, spring onions and beans sprouts and season, to taste, with salt and freshly ground black pepper.
  5. To serve, pour into a bowl and sprinkle with sesame seeds.
