- 1 tbsp olive oil
- Âź onion, chopped
- 1 garlic clove, chopped
- 1 red chilli, sliced
- 150ml/5fl oz hot chicken stock
- 75g/2½oz chicken breast, cut into strips
- 50g/1oz ready-made egg noodles, cooked according to packet instructions
- 2 spring onions, chopped
- handful bean sprouts
- salt and freshly ground black pepper
- 1 tbsp sesame seeds
- Heat the olive oil in a medium saucepan over a medium heat. Add the onion and cook for 2-3 minutes, until softened.
- Add the garlic and chilli and cook for another minute.
- Add the chicken stock and chicken breast. Bring to the boil, then reduce the heat to simmer for four minutes, or until the chicken is completely cooked through.
- Add the noodles, spring onions and beans sprouts and season, to taste, with salt and freshly ground black pepper.
- To serve, pour into a bowl and sprinkle with sesame seeds.
