Oregon Trail Gazpacho Recipe

  • 1 cucumber, diced
  • 2 Roma tomatoes, diced
  • 1 small sweet onion (such as Vidalia®), diced
  • 3 tablespoons red wine vinegar
  • 2 tablespoons extra-virgin olive oil
  • 1 clove garlic, crushed
  • 2 leaves fresh basil, chopped
  • 1/2 teaspoon Italian seasoning
  • 1/8 teaspoon freshly ground black pepper
  • 1/8 teaspoon salt (optional)
  1. Combine cucumber, tomatoes, sweet onion, vinegar, olive oil, garlic, basil, Italian seasoning, black pepper, and salt in a bowl; refrigerate until chilled, at least 30 minutes.
