- 2 medium potatoes, peeled and cubed
- 2 tablespoons lemon juice
- 5 1/2 teaspoons olive oil or vegetable oil
- 1 garlic clove, minced
- 1 1/2 teaspoons minced fresh oregano
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- In a bowl, combine all of the ingredients. Transfer to a greased 1-qt. baking dish. Bake, uncovered, at 425 degrees F for 45-50 minutes or until tender, stirring twice.
