- Juice of 1 lemon, or 2 tablespoons red wine vinegar or cider vinegar
- 2 tablespoons honey
- 1 tablespoon soy sauce
- 1/3 cup vegetable oil
- 4 large carrots or 6 medium peeled
- 1 cup raisins
- 2/3 cup sunflower seeds
- Place the lemon juice or vinegar, honey, soy sauce, and oil in a large mixing bowl. Stir until blended. Grate the carrots into the bowl. Add the raisins and sunflower seeds and mix well. Store in a covered container.
