- 1/4 cup red onion, chopped
- 3/4 cup long-grain white rice
- 3/4 cup fat-free chicken broth
- 2 teaspoons orange peel
- 3/4 cup orange juice
- 1 teaspoon ground cardamom
- 1 orange, peeled and chopped
- 2 tablespoons pistachio nuts
- In a medium saucepan, heat onion, rice, broth, peel, juice, and cardamom to a boil. Simmer, covered, until liquid is absorbed, about 18 minutes. Remove from heat. Stir in orange pieces and nuts.
