Oatmeal Chia Hemp Chocolate Chip Vegan Bars Recipe

  • 1/3 cup boiling water
  • 2 tablespoons ground flax seed
  • 3 cups quick-cooking oats
  • 1/4 cup chia seeds
  • 2 tablespoons hemp seed hearts
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup agave nectar
  • 1/3 cup melted coconut oil
  • 1/2 cup semisweet chocolate chips
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Mix boiling water and flax seed meal together in a bowl; set aside to thicken.
  3. Combine oats, chia seeds, hemp hearts, baking powder, baking soda, and salt together in a large bowl; stir in agave nectar, coconut oil, and flax mixture until well mixed. Fold chocolate chips into mixture; press into a 9×11-inch baking pan.
  4. Bake in the preheated oven until cooked through, about 15 minutes. Cool to room temperature and slice into bars. Refrigerate before removing from pan.
