No-olives Greek salad Recipe

  • 100g/3½oz feta, cut into 1cm/½in cubes
  • 10 cherry tomatoes, halved
  • small handful rocket
  • 4 tbsp olive oil
  • ½ garlic clove, peeled, crushed
  • salt and freshly ground black pepper
  1. Put the feta and cherry tomatoes into a bowl.
  2. Make a dressing by mixing the olive oil with the garlic in another bowl.
  3. Drizzle the dressing over the salad and serve at once.
