Nacho Casserole Recipe

  • 1/2 (14.5 ounce) package tortilla chips, divided
  • 1 (8 ounce) package shredded 2% Mexican cheese blend, divided
  • 1 (15 ounce) can black beans, rinsed and drained, divided
  • 1/2 sweet onion, chopped
  • 1/2 (7 ounce) can green salsa (salsa verde)
  • 1/2 (7 ounce) can salsa casera
  • 1 (8 ounce) container reduced-fat sour cream
  • 1 lime, cut into wedges
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Spread 1/2 the tortilla chips into a 10 1/2×6-inch baking dish; sprinkle with 1/2 the Mexican cheese blend. Layer 1/2 the black beans over cheese layer. Repeat layering with remaining tortilla chips, Mexican cheese blend, and black beans. Spread onion over bean layer; top with salsa verde and salsa casera.
  3. Bake in the preheated oven until cheese is melted, about 20 minutes. Top nachos with sour cream; serve with lime wedges.
