Mixed Greens with Olive Vinaigrette Recipe

  • 2 tablespoons minced black olives
  • 1 tablespoon minced shallots
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon Safeway SELECT Dijon mustard
  • 2 tablespoons Safeway SELECT Verdi Balsamic Vinegar
  • 1 tablespoon Safeway SELECT Verdi Olive Oil
  • 1 pound spring mix or other mixed salad greens
  • Salt and pepper
  1. In a large bowl, whisk together the olives, shallots, garlic, mustard, vinegar, and olive oil until well blended.
  2. Add salad greens to bowl and mix to coat. Add salt and pepper to taste.
