  • 2 pounds fresh pineapple, peeled, cored and cubed
  • 1 cucumber, cubed
  • 3 red bell peppers, cut into matchsticks
  • 6 ounces Champagne vinegar
  • 3 ounces sugar
  • 2 tablespoons fresh chopped mint
  1. Combine ingredients. Marinate for 30 minutes.
