- 1 cucumber, diced
- 1 scallion, minced
- 2 tablespoons red bell pepper, minced
- 2 tablespoons fresh mint leaves, minced
- 1 tablespoon wine vinegar
- 1 dash Tabasco sauce
- 1 pinch salt
- In a mixing bowl, add the vinegar, Tabasco sauce, pinch of salt and the minced mint leaves. Stir.
- Meanwhile, peel and dice the cucumber. Mince the scallion and the red bell pepper. Toss everything together, cover and refrigerate for an hour or more.
