Minestrone Ravioli Stew Recipe

  • 1 (14.5 ounce) can chicken or vegetable broth
  • 1 (9 ounce) package refrigerated cheese-filled ravioli
  • 2 (14.5 ounce) cans CONTADINA® Recipe Ready Diced Tomatoes with Sauteed Onions
  • 1 (15 ounce) can cannellini, great northern or navy beans, rinsed and drained
  • 1/8 teaspoon crushed red pepper
  • 2 cups diced cooked chicken
  • 2 cups torn fresh spinach
  1. Bring broth and 1/2 cup water to boil in large saucepan. Add ravioli. Return to boil; reduce heat and simmer, covered, 5 minutes.
  2. Stir in undrained tomatoes, beans and pepper. Return to boil; reduce heat and simmer, covered, 5 minutes.
  3. Add chicken; heat through. Stir in spinach until wilted. Sprinkle with shredded Parmesan cheese, if desired.
