- 1 cup lean ground beef
- 1/4 cup frozen corn kernels
- 1 Roma tomato, chopped
- 1 (10 ounce) package Santa Fe-style rice and beans frozen dinner
- 1 teaspoon fresh cilantro leaves, chopped
- In a skillet, brown beef over medium heat. Drain fat and return to pan with the corn and tomato.
- Microwave the dinner according to package instructions, then stir into the beef mixture.
- Simmer on low for 2 to 3 minutes, stirring occasionally. Top with cilantro just before serving.
