Mexcellent Stovetop Casserole Recipe

  • 1 cup lean ground beef
  • 1/4 cup frozen corn kernels
  • 1 Roma tomato, chopped
  • 1 (10 ounce) package Santa Fe-style rice and beans frozen dinner
  • 1 teaspoon fresh cilantro leaves, chopped
  1. In a skillet, brown beef over medium heat. Drain fat and return to pan with the corn and tomato.
  2. Microwave the dinner according to package instructions, then stir into the beef mixture.
  3. Simmer on low for 2 to 3 minutes, stirring occasionally. Top with cilantro just before serving.
