- 1/4 cup olive oil
- 1 small onion, halved, thinly sliced
- 2 garlic cloves, minced
- 1/8 teaspoon Archer Farms™ Red Pepper Flakes
- 1 (1 pound) package Frozen Archer Farms™ Grilled Pepper Blend
- 1 pound frozen Market Pantry™ Raw Shrimp, peeled
- 1 tablespoon chopped fresh oregano
- 1/4 cup Kalamata olives, pitted, quartered
- 3/4 pound Market Pantry™ Rigatoni Pasta
- 1 cup shredded Parmesan cheese
- In large saucepan cook pasta according to package directions.
- Meanwhile, in large skillet heat olive oil over medium heat until hot. Add onion, garlic and red pepper flakes; cook and stir 4 minutes or until onions are softened. Add bell peppers, shrimp and oregano; cook and stir 10 minutes or until peppers are tender and shrimp are pink. Stir in olives; remove from heat.
- Toss sauce with hot cooked noodles; sprinkle with Parmesan cheese. Season with salt and pepper if desired.
