Mediterranean Shrimp with Rigatoni Recipe

  • 1/4 cup olive oil
  • 1 small onion, halved, thinly sliced
  • 2 garlic cloves, minced
  • 1/8 teaspoon Archer Farms™ Red Pepper Flakes
  • 1 (1 pound) package Frozen Archer Farms™ Grilled Pepper Blend
  • 1 pound frozen Market Pantry™ Raw Shrimp, peeled
  • 1 tablespoon chopped fresh oregano
  • 1/4 cup Kalamata olives, pitted, quartered
  • 3/4 pound Market Pantry™ Rigatoni Pasta
  • 1 cup shredded Parmesan cheese
  1. In large saucepan cook pasta according to package directions.
  2. Meanwhile, in large skillet heat olive oil over medium heat until hot. Add onion, garlic and red pepper flakes; cook and stir 4 minutes or until onions are softened. Add bell peppers, shrimp and oregano; cook and stir 10 minutes or until peppers are tender and shrimp are pink. Stir in olives; remove from heat.
  3. Toss sauce with hot cooked noodles; sprinkle with Parmesan cheese. Season with salt and pepper if desired.
