- 3 cups Corn Chex® cereal
- 3 cups Chocolate Chex® cereal
- 2 cups Cinnamon Chex® cereal
- 1 cup whole cashews
- 1/3 cup packed brown sugar
- 6 tablespoons butter or margarine
- 2 tablespoons light corn syrup
- 2 teaspoons ground ancho chile pepper
- 1/4 teaspoon ground red pepper (cayenne)
- 1 1/2 teaspoons vanilla
- 1 cup dark chocolate chips
- In large microwaveable bowl, mix cereals and cashews.
- In 2-cup microwaveable measuring cup, microwave brown sugar, butter, corn syrup, chili and red pepper uncovered on high about 1 1/2 minutes, stirring after 1 minute, until melted and smooth. Stir in vanilla. Pour over cereal mixture; stir until evenly coated.
- Microwave uncovered on high 5 to 6 minutes, stirring after every minute. Spread on waxed paper or foil to cool. Break into bite-size pieces; stir in chocolate chips. Store in airtight container.
