- 1 fillet red snapper, skinned and sliced into very thin strips
- 1 tsp salt
- 1 lime, juice only
- 1 lemon, juice only
- 100g/3½oz rice, cooked according to packet instructions and cooled
- 1 tsp ground turmeric
- 2 tbsp coconut milk
- small handful fresh basil, chopped
- small handful fresh mint, chopped
- Âź onion, finely chopped
- salt and freshly ground black pepper
- 1 lemon, juice only
- 1 lime, zest only
- 1 tbsp olive oil
- small piece fresh coconut, chopped flesh only
- 1 tomato, seeds removed and sliced
- 1 orange, peeled and chopped
- 1 tbsp coconut milk
- small handful fresh flatleaf parsley, chopped
- salt and freshly ground black pepper
- 1 tomato, sliced, to serve
- For the marinated red snapper, place the raw snapper pieces into a bowl and sprinkle with salt. Add the lime and lemon juice and stir. Set aside to marinate for a few minutes.
- For the rice salad, place all the rice salad ingredients into a bowl and mix well.
- For the citrus relish, place all the citrus relish ingredients into another bowl and mix well.
- To serve, place the tomato slices onto a serving plate. Top with the rice salad, citrus relish and marinated snapper and drizzle over the marinade.
