Marinated red snapper with turmeric and coconut rice salad and citrus relish Recipe

  • 1 fillet red snapper, skinned and sliced into very thin strips
  • 1 tsp salt
  • 1 lime, juice only
  • 1 lemon, juice only
  • 100g/3½oz rice, cooked according to packet instructions and cooled
  • 1 tsp ground turmeric
  • 2 tbsp coconut milk
  • small handful fresh basil, chopped
  • small handful fresh mint, chopped
  • Âź onion, finely chopped
  • salt and freshly ground black pepper
  • 1 lemon, juice only
  • 1 lime, zest only
  • 1 tbsp olive oil
  • small piece fresh coconut, chopped flesh only
  • 1 tomato, seeds removed and sliced
  • 1 orange, peeled and chopped
  • 1 tbsp coconut milk
  • small handful fresh flatleaf parsley, chopped
  • salt and freshly ground black pepper
  • 1 tomato, sliced, to serve
  1. For the marinated red snapper, place the raw snapper pieces into a bowl and sprinkle with salt. Add the lime and lemon juice and stir. Set aside to marinate for a few minutes.
  2. For the rice salad, place all the rice salad ingredients into a bowl and mix well.
  3. For the citrus relish, place all the citrus relish ingredients into another bowl and mix well.
  4. To serve, place the tomato slices onto a serving plate. Top with the rice salad, citrus relish and marinated snapper and drizzle over the marinade.
