Maple-Glazed Turkey with Smoked Turkey Stuffing Recipe

  • 1 turkey (about 15 lbs/7.5 kg), including giblets
  • Salt and freshly ground black pepper to taste
  • ¼ cup (50 mL) butter, softened
  • ½ cup (125 mL) pure maple syrup
  • 1 tbsp (15 mL) Worcestershire sauce
  • 1 tbsp (15 mL) peanut oil
  • 4 slices bacon, finely chopped
  • 2 stalks celery, diced
  • 1 large tart apple, peeled and diced
  • 1 cup (250 mL) minced onion
  • 1 tsp (5 mL) dried sage
  • 1 tsp (5 mL) dried thyme
  • ½ tsp (2 mL) dried rosemary, crumbled
  • Pinch ground nutmeg
  • 4 cups (1 L) toasted bread cubes
  • 2 cups (500 mL) diced smoked turkey breast
  • 1 cup (250 mL) chopped toasted walnuts
  • 1 cup (250 mL) chicken or turkey broth
  • Salt and freshly ground black pepper to taste
  1. Follow recipe for Traditional Roast Turkey, using turkey, salt, pepper and butter.
  2. Prepare the glaze: Combine maple syrup, Worcestershire sauce and oil. During the last hour of roasting, brush turkey every 20 minutes with glaze.
  3. Prepare the stuffing: In a skillet, over medium heat, sauté bacon until cooked but not crisp. Add celery, apple, onion, sage, thyme, rosemary and nutmeg; sauté for 3 minutes. Add bread cubes, smoked turkey, walnuts, broth, salt, pepper and giblets (if using). Just before serving, stir ½ cup (125 mL) turkey drippings into stuffing and reheat. Serve turkey with stuffing.
