- 3 firm but ripe mangoes, peeled, pitted, cut into 1/4-inch dice
- 4 1/2 tablespoons sugar
- 3 tablespoons fresh lime juice
- 1 1/2 tablespoons dark rum
- 1 tablespoon grated lime peel
- Mix all ingredients in small bowl. Let stand at room temperature 30 minutes, tossing occasionally. Serve chilled or at room temperature.
