Mahi Mahi with Pineapple Salsa Recipe

  • 1 (16 ounce) package Archer Farms™ all natural frozen mahi mahi fillets, thawed
  • Kosher salt
  • Fresh ground pepper
  • 1 tablespoon Archer Farms™ extra virgin olive oil
  • 1 (10 ounce) container refrigerated 100% natural black bean pico de gallo
  • 1/2 cup chopped fresh pineapple
  1. Season fillets with salt and pepper. Heat oil in large skillet over medium heat until hot; add fillets.
  2. Cook 8 to 10 minutes or until fish flakes easily with a fork, turning once. Reduce heat to low.
  3. Add remaining ingredients; cover. Cook 3 minutes or until mixture is hot.
