- 1 (16 ounce) package Archer Farms™ frozen mahi mahi fillets, thawed
- 2 teaspoons Archer Farms™ olive oil
- 1 cup Archer Farms™ vodka pasta sauce
- 1/2 teaspoon finely grated orange peel
- Chopped parsley
- Heat oil in large nonstick skillet. Season fish with salt and pepper. Cook 10 to 12 minutes, turning once, or until fish flakes easily with fork.
- Meanwhile, heat pasta sauce and orange peel in small sauce pan over low heat 10 minutes, stirring occasionally, until hot.
- Spoon pasta sauce over mahi mahi to serve. Sprinkle with parsley.
