Mahi Mahi with Citrus Vodka Sauce Recipe

  • 1 (16 ounce) package Archer Farms™ frozen mahi mahi fillets, thawed
  • 2 teaspoons Archer Farms™ olive oil
  • 1 cup Archer Farms™ vodka pasta sauce
  • 1/2 teaspoon finely grated orange peel
  • Chopped parsley
  1. Heat oil in large nonstick skillet. Season fish with salt and pepper. Cook 10 to 12 minutes, turning once, or until fish flakes easily with fork.
  2. Meanwhile, heat pasta sauce and orange peel in small sauce pan over low heat 10 minutes, stirring occasionally, until hot.
  3. Spoon pasta sauce over mahi mahi to serve. Sprinkle with parsley.
