Long Grain & Wild Rice with Ginger Glazed Chicken Recipe

  • 1 (6 ounce) package UNCLE BEN'S® Long Grain & Wild Rice Original Recipe
  • 4 boneless, skinless chicken breasts
  • Nonstick pan coating spray
  • 1/2 cup chicken stock
  • 1/2 cup brown sugar
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 1 teaspoon ginger powder
  1. Prepare rice according to package directions.
  2. Season chicken with salt and pepper.
  3. Grill, bake or pan-sear chicken breasts.
  4. In a small saucepan, add chicken stock, brown sugar, honey, mustard and ginger. Over medium heat, stir mixture often until glaze forms, about 4 minutes.
  5. Remove from heat and let stand until chicken is done.
  6. Apply glaze to chicken and serve with UNCLE BEN'S(R) Long Grain & Wild Rice.
