- 1 large red onion, thinly sliced
- 1/4 cup fresh lime juice
- 2 tablespoons chopped fresh cilantro
- 2 teaspoons olive oil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- Mix all ingredients in large bowl. Cover and let stand 1 to 3 hours. (Can be made 2 days ahead. Cover and refrigerate.)
