- 1 cup plain nonfat yogurt
- 1 teaspoon finely grated lemon zest
- 1 tablespoon fresh lemon juice
- 1/4 cup chopped fresh mint or parsley, if available, or 1/2 teaspoon dried tarragon
- Salt and freshly ground black pepper, to taste
- Combine all of the ingredients in a small bowl. Refrigerate, covered, until needed.
