- 1 teaspoon tomato paste
- 1 teaspoon apple cider vinegar
- 2 teaspoons sunflower oil
- 1 cup baby spinach, rinsed and dried
- 1 cup romaine lettuce, chopped
- 1/3 cup garbanzo beans, drained and rinsed
- 2 tablespoons pine nuts
- 2 tablespoons sliced roasted red peppers
- 1/3 cup grape tomatoes, halved
- 1 strip pre-cooked microwaveable bacon
- In a small bowl, combine tomato paste, vinegar, and oil. Set aside.
- In a large bowl, toss the remaining ingredients together. Drizzle with dressing. Serve immediately.
