Lift Your Mood Salad Recipe

  • 1 teaspoon tomato paste
  • 1 teaspoon apple cider vinegar
  • 2 teaspoons sunflower oil
  • 1 cup baby spinach, rinsed and dried
  • 1 cup romaine lettuce, chopped
  • 1/3 cup garbanzo beans, drained and rinsed
  • 2 tablespoons pine nuts
  • 2 tablespoons sliced roasted red peppers
  • 1/3 cup grape tomatoes, halved
  • 1 strip pre-cooked microwaveable bacon
  1. In a small bowl, combine tomato paste, vinegar, and oil. Set aside.
  2. In a large bowl, toss the remaining ingredients together. Drizzle with dressing. Serve immediately.
