- 10 tablespoons butter
- ½ cup sugar
- ½ teaspoon grated lemon rind
- 1 tablespoon lemon juice
- 1 egg
- 1 cup flour
- ¼ teaspoon salt
- ¾ cup semi-sweet chocolate morsels
- Preheat oven to 375 degrees
- Prepare 2 cookie sheets. Beat the butter, sugar, and lemon rind until light and creamy. Stir in the lemon juice and egg. Combine the flour and salt and fold into the butter mixture. Add the chocolate morsels and chill for an hour.
- Drop from a teaspoon onto the cookie sheets. Bake for 12 minutes, until the cookies have a deep golden edge. Cool on a cookie rack.
