Leek and lamb koftas Recipe

  • 250g/8¾oz lamb mince
  • ½ leek, chopped
  • handful breadcrumbs
  • ½ tsp paprika
  • ½ tsp chilli flakes
  • ½ tsp ginger
  • 1 free-range egg yolk
  • 1 tbsp oil
  • herb salad, to serve
  1. Preheat the oven to 200C/400F/Gas 6.
  2. Mix together all of the ingredients thoroughly and mould around three skewers.
  3. Heat the oil in a frying pan and cook the lamb skewers for 1-2 minutes to seal on all sides.
  4. Place into the oven for ten minutes, until golden and cooked through.
  5. Serve with a herb salad.
