- 1 pound Laura's 92% Lean Ground Beef
- 1/2 small onion, finely chopped
- 2 tablespoons taco seasoning mix
- 1 (10 ounce) package frozen spinach, thawed and squeezed dry
- 1 (15 ounce) can low-salt black beans, rinsed and drained
- 1/4 cup salsa
- 8 (8 inch) fat-free tortillas
- 3/4 cup light Mexican shredded cheese blend
- 1 tablespoon sour cream (optional)
- 1 (12 ounce) jar salsa (optional)
- 1 cup chopped tomatoes (optional)
- 1/4 cup chopped cilantro (optional)
- Cook beef and onion in a large nonstick skillet over medium-high heat 5 minutes or beef is browned and onion is tender; drain.
- Stir in seasoning mix and cook 2 more minutes. Stir in spinach, black beans and salsa and cook 5 minutes or until thoroughly heated.
- Spoon about 1/4 cup beef mixture evenly down center of each tortilla; sprinkle evenly with cheese. Roll up tortillas and top with sour cream, salsa, tomatoes and cilantro, if desired.
