Kohl Slaw Recipe
- 2 tablespoons cherry vinegar
- 1 tablespoon vegan mayonnaise (such as Follow Your Heart® Veganaise®)
- 1 tablespoon agave nectar
- 1 tablespoon brown mustard seeds
- 1 teaspoon Dijon mustard (optional)
- salt and ground black pepper to taste
- 2 crisp apples, shredded
- 2 kohlrabi bulbs, peeled and shredded
- 4 carrots, shredded
- Whisk vinegar, vegan mayonnaise, agave nectar, mustard seeds, Dijon mustard, salt, and pepper together in a bowl until dressing is smooth. Stir apples, kohlrabi, and carrots into dressing until evenly coated. Cover bowl with plastic wrap and refrigerate for flavors to blend, at least 1 hour.
