Karens AIP Avocado Mayo Recipe

  • 1 ripe avocado, halved and pitted
  • 1/4 cup extra-virgin olive oil
  • 3 tablespoons balsamic vinegar, or more to taste
  • 1 1/2 tablespoons maple syrup
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon coconut oil, melted
  • 2 cloves garlic, minced
  • 1/2 teaspoon sea salt
  1. Combine avocado, olive oil, balsamic vinegar, maple syrup, apple cider vinegar, coconut oil, garlic, and sea salt in a bowl. Blend with an immersion blender until creamy and smooth.
