Johnny Cakes Recipe
- 1 cup all-purpose flour
- 2 cups yellow cornmeal
- 4 teaspoons sugar
- 2 teaspoons salt
- 2 large eggs, lightly beaten
- 2 cups 2% milk
- Canola oil, for frying
- Stir the flour, cornmeal, sugar and salt together in a medium mixing bowl.
- Mix the eggs and LACTAID(R) Reduced Fat Milk. Combine with the flour mixture, and mix with a wire whisk until smooth.
- Heat about 1 tablespoon of oil in a large saute pan or skillet over medium-high heat.
- Cook Johnny cakes. Drop about 2 tablespoons of batter for each Johnny Cake on the griddle. Cook 1 to 2 minutes on each side, or until the edges begin to bubble. Flip and cook until golden.
- Serve warm on a large platter with your choice of accompaniments.
