- 1 cup papaya, cubed
- 1/2 cup jicama, diced
- 1/2 cup onion, diced
- 1/2 cup cilantro leaves, whole
- 1 jalapeno, seeded and minced
- 1 lime, juiced
- 1/4 teaspoon cumin
- 1/4 teaspoon salt
- Juice the lime in a small bowl. Remove any seeds. Add the cumin and salt and stir. Add the jicama, onion, cilantro and jalapeno. Cover and refrigerate for 1 hour.
- About 5 to 30 minutes before serving, toss with the papaya.
