Improvised Detox Salad Recipe

  • 1 green apple, shredded
  • 1 red apple, shredded
  • 1/2 yellow bell pepper, shredded
  • 1/2 cucumber, shredded
  • 1/2 small raw beet, shredded
  • 1 carrot, shredded
  • 1/2 small red onion, very thinly sliced
  • 1 broccoli stem, very thinly sliced
  • 1 rib celery, very thinly sliced
  • 2 sprigs fresh parsley, finely chopped
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon lemon juice
  • salt and ground black pepper to taste
  • 1 tablespoon toasted pine nuts, or to taste (optional)
  1. Combine green apple, red apple, yellow bell pepper, cucumber, beet, and carrot in a large bowl. Stir in onion, broccoli stem, celery, and parsley. Add olive oil, lemon juice, salt, and pepper. Toss to mix well. Garnish with pine nuts.
