Ice creams Recipe

  • 2 tbsp cracked black pepper
  • 1 litre/1¾ pint vanilla ice cream
  • 2 tbsp peri-peri powder
  • 1 litre/1¾ pint vanilla ice cream
  • juice of 4 passion fruit (granadilla)
  • 1 tbsp caster sugar
  • 25ml/1fl oz water
  • 1 litre/1¾ pint vanilla ice cream
  1. For the black pepper ice cream, soften the vanilla ice cream and mix in the cracked black pepper until evenly spread.
  2. Taste the ice cream at this stage, if you prefer a stronger taste of black pepper add some more. Mix thoroughly and re-freeze.
  3. For the peri-peri (chilli powder) ice cream, soften the vanilla ice cream and mix in the peri-peri until evenly spread.
  4. Taste the ice cream at this stage, if you prefer a stronger taste of peri-peri add some more. Mix thoroughly and re-freeze.
  5. For the passion fruit (granadilla) ice cream, soften the vanilla ice cream.
  6. Put the remaining ingredients in a pan and reduce until it becomes the consistency of syrup. Let the syrup mixture cool.
  7. When the mixture has cooled add to the vanilla ice cream until evenly spread and then re-freeze.
