- 1 tbsp olive oil
- 100g/3½oz pork fillet
- sea salt and freshly ground black pepper
- 1 tsp honey
- 75g/2½oz blackberries
- 100ml/3½fl oz red wine
- 1 tbsp milk
- 2 tsp sugar
- Preheat the oven to 200C/400F/Gas 6.
- For the pork, heat the oil in an ovenproof pan. Season the pork with salt and freshly ground black pepper, drizzle with the honey and place into the pan. Cook on all sides to brown the meat.
- Transfer the pan to the oven and cook for 2-3 minutes, or until cooked through. Remove from the oven and allow to rest.
- For the sauce, place all of the sauce ingredients in a saucepan and cook over a medium heat for two minutes.
- Blend the sauce with a hand blender, or transfer to a food processor to blend.
- To serve, place the pork on a plate with the sauce spooned over.
