- 2/3 cup rice wine vinegar
- 3 tablespoons soy sauce
- 5 tablespoons hoisin sauce
- 2 teaspoons ground ginger
- 2 tablespoons sesame oil
- 4 cups cooked shredded chicken
- 2 medium celery stalks, finely diced
- 2 medium green onions, thinly sliced
- 2 tablespoons finely chopped fresh cilantro
- 1/2 cup chopped dry roasted peanuts
- In a small bowl, whisk vinegar, soy sauce, hoisin sauce, ginger and sesame oil.
- In a medium bowl, stir together chicken, celery, green onions and cilantro. Add dressing; toss to coat and top with peanuts. Serve.
