- 1/3 cup honey (eyeball it)
- 2 limes, juiced
- 2 teaspoons hot sauce (eyeball it)
- 1/2 teaspoon cumin (eyeball it in your palm)
- 1 teaspoon poppy seeds (optional)
- 3 tablespoons extra-virgin olive oil (EVOO), eyeball it
- Salt and freshly ground pepper
- 1 large jicama bulb, peeled and cut into 3-inch matchsticks
- 4 scallions, cut into 3-inch pieces and sliced lengthwise into thin strips
- 1 small red bell pepper, seeded and thinly sliced
- 1 tablespoon finely chopped cilantro (optional)
- Combine the honey, lime juice, hot sauce, cumin and poppy seeds in a salad bowl and whisk in the EVOO. Season the dressing to taste with salt and pepper. Add the jicama, scallions, bell pepper and cilantro and toss. Adjust the seasonings.
