Hearty Minestrone with Tortellini Recipe

  • 1 pound Italian sausage, hot or sweet
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (48 ounce) can COLLEGE INN® Beef Broth
  • 1 (14.5 ounce) can DEL MONTE® Diced Tomatoes
  • 3/4 cup ketchup
  • 3/4 cup dry red wine
  • 2 cups thinly sliced carrots
  • 1 cup thinly sliced celery
  • 2 cups sliced zucchini
  • 8 ounces cheese tortellini
  • Grated Parmesan cheese
  1. In large saucepot, brown sausage; drain on paper towels. Discard fat. In same pot, cook onions and garlic until tender. Add broth, tomatoes, ketchup, wine, carrots, and celery. Cover; simmer 30 minutes. Add zucchini and tortellini. Simmer, covered, 25 minutes. Serve sprinkled with cheese.
