- 1 pound Italian sausage, hot or sweet
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 (48 ounce) can COLLEGE INN® Beef Broth
- 1 (14.5 ounce) can DEL MONTE® Diced Tomatoes
- 3/4 cup ketchup
- 3/4 cup dry red wine
- 2 cups thinly sliced carrots
- 1 cup thinly sliced celery
- 2 cups sliced zucchini
- 8 ounces cheese tortellini
- Grated Parmesan cheese
- In large saucepot, brown sausage; drain on paper towels. Discard fat. In same pot, cook onions and garlic until tender. Add broth, tomatoes, ketchup, wine, carrots, and celery. Cover; simmer 30 minutes. Add zucchini and tortellini. Simmer, covered, 25 minutes. Serve sprinkled with cheese.
