Ham & Asparagus Recipe

  • 8 ounces trimmed asparagus, cut into 1-inch lengths
  • 1/4 teaspoon salt
  • 8 ounces ham steak, diced
  • 1/4 teaspoon dried tarragon
  • 6 ounces Swiss cheese
  • 4 large eggs
  • 1/2 cup evaporated milk
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  1. Place oil, asparagus, salt and 3 Tbs. water in a 12-inch skillet. Cover with lid, and turn heat on high. Cook until asparagus are just tender, 3 to 4 minutes. Add ham and saute until well- browned, 2 to 3 minutes. Set aside. Prepare Recipe for Crustless Quiche, and when instructed, add tarragon, cheese and ham filling to the egg mixture.
  2. Prepare filling ingredients and set aside. Grease a 9-inch Pyrex pie plate. Adjust oven rack to center position, and heat oven to 400 degrees.
  3. Whisk eggs, milk, mustard, salt, and pep- per. Stir in herb of choice, cheese of choice and prepared filling ingredients. Pour mixture into the prepared pie plate, and bake until just set, about 20 minutes. Remove from oven and let rest 5 minutes. Cut into wedges and serve.
