Halibut in Yellow Curry Broth Recipe

  • 4 (6 ounce) fillets of halibut
  • 2 tablespoons vegetable oil
  • 4 cups zucchini, finely diced
  • 1 cup frozen peas, thawed
  • 4 cups baby spinach
  • 1/2 cup fresh basil, finely chopped
  • 1/2 cup coconut milk
  • 1 cup water
  • 1 cup VH® Yellow Curry Sauce
  1. In a large pot heat oil over medium and saute zucchini until tender, about 7 minutes. Add water and VH(R) Yellow Curry Sauce, simmer 3 minutes.
  2. Add fish, cover and simmer for 10 minutes or until fish is cooked through.
  3. Place cooked fish in bowls. To the pot add peas, spinach and basil and cook for 3 minutes until spinach has wilted. Ladle broth and vegetables between bowls of fish.
