- 3 frozen chicken breast halves, thawed
- 2 teaspoons canola oil
- 2 teaspoons Sutton & Dodge™ Moroccan rub
- 1/4 cup Archer Farms™ mango curry grilling sauce
- 1/4 cup mayonnaise
- 4 lettuce leaves
- 4 pita pockets
- Heat grill.
- Rinse and pat thawed chicken dry. Rub 1 teaspoon Moroccan rub on both sides of every chicken breast.
- Grill chicken, covered, over medium-high heat 5 minutes on each side.
- Turn chicken once more and grill an additional 2 to 3 minutes per side, or until it is fork tender and juices run clear.
- Mix mango curry grilling sauce and mayonnaise together in small bowl.
- Spread 1 tablespoon of sauce inside each pita pocket.
- Cut chicken breasts in 1/2-inch slices and fill pitas with lettuce leaf and chicken slices. Top with remaining sauce.
