Griddled salmon Recipe

  • ½ salmon fillet, butterflied
  • 1 tbsp olive oil
  • 2 spring onions, sliced
  • 50g/1 ¾oz sweetcorn kernels
  • ½ tomato, deseeded and chopped
  • handful breadcrumbs
  • 100ml/3 ½oz double cream
  • salt and freshly ground black pepper
  1. Heat a griddle pan and griddle the salmon for 1-2 minutes on each side.
  2. Heat the oil in a pan and gently sauté the onions, sweetcorn, tomato and breadcrumbs for 3-5 minutes.
  3. Add the cream and cook down for a further 2-3 minutes.
  4. Season with salt and freshly ground black pepper and serve with the griddled salmon.
