- ½ sweet potato
- 3 tbsp double cream
- 1 tbsp chives, chopped
- 2 eggs
- 2 tbsp olive oil
- 1 lamb chump steak
- salt and freshly ground black pepper
- To make the mash, peel and dice the sweet potato.
- Boil until tender and drain.
- Mash the sweet potato, mash in the cream and chives and season.
- Boil the eggs for five to six minutes.
- Peel and cut the eggs into quarters.
- Drizzle oil over the lamb and season.
- Griddle in a hot pan for two minutes either side.
- Cut the steak into two pieces and serve on the mash with the egg.
