- 1/2 cup Ranch dressing
- 1/3 cup barbeque sauce
- 2 cups shredded cooked chicken
- 2 medium tomatoes, seeded, diced and lightly salted
- 3/4 cup chopped fresh cilantro
- 1 (10 ounce) package frozen corn, thawed
- 1 (15 ounce) can black beans, drained
- 1 (10 ounce) package mixed salad greens
- 1 cup French-fried onions
- In a small bowl, mix Ranch dressing and barbeque sauce; set aside.
- In a large bowl, toss chicken, tomatoes, cilantro, corn, black beans and salad greens. Add dressing; toss and serve with fried onions sprinkled over each serving.
