Green Rice Recipe
- 3 cups cooked rice
- 1 cup minced fresh parsley
- 1/2 cup shredded Cheddar cheese, divided
- 1/3 cup chopped onion
- 1/4 cup chopped green pepper
- 1 garlic clove, minced
- 2 eggs, lightly beaten
- 1 (12 ounce) can evaporated milk
- 1/2 cup vegetable oil
- 3 tablespoons lemon juice
- 1 tablespoon grated lemon peel
- 1 teaspoon salt
- 1/2 teaspoon seasoned salt
- 1/2 teaspoon pepper
- In a bowl, combine the rice, parsley, 1/3 cup cheese, onion, green pepper and garlic. In another bowl, combine the eggs, milk, oil, lemon juice and peel, salt, seasoned salt and pepper; mix well. Stir into the rice mixture. Transfer to a greased 2-qt. baking dish; sprinkle with remaining cheese. Bake, uncovered, at 350 degrees F for 40-45 minutes or until golden brown.
