Green bean salad with Stilton croûton Recipe

  • 2 tsp olive oil
  • 1 tsp balsamic vinegar
  • salt and freshly ground black pepper
  • 150g/5½oz green beans, topped and tailed, blanched
  • 1 slice ciabatta, toasted
  • 30g/1oz Stilton
  1. Place the oil and vinegar into a small bowl, season with salt and freshly ground black pepper and whisk together.
  2. Place the green beans into a large bowl, pour over the dressing and stir.
  3. To serve, spread the Stilton over the toasted ciabatta and place on top of the salad.
