- 2 cups seedless red grapes, halved
- 1 cucumber, chopped
- 1/2 cup cooked quinoa, or more to taste
- 1/4 cup chopped fresh mint, or to taste
- 1/4 cup chopped fresh spinach, or more to taste
- 2/3 cup toasted slivered almonds
- 1 teaspoon salt
- 8 teaspoons grapeseed oil
- 8 teaspoons lime juice
- Toss grapes, cucumber, quinoa, mint, spinach, and almonds together in a large bowl; sprinkle salt over the top.
- Whisk grapeseed oil and lime juice together in a small bowl; pour over quinoa mixture and toss to coat. Refrigerate until flavors combine, at least 3 hours.
