Grandmas Banana Oatmeal Bread Recipe

  • 1/2 cup light butter
  • 3/4 cup SPLENDA® No Calorie Sweetener, Granulated
  • 1 egg
  • 1 egg white
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups mashed bananas
  • 1/4 cup buttermilk
  • 1 cup all-purpose flour
  • 1 cup quick cooking oats
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup chopped raisins (optional)
  1. Preheat oven to 350 degrees F (175 degrees C). Spray 9×5 inch loaf pan with cooking spray, and set aside.
  2. In a large bowl, mix together butter and SPLENDA(R), and then mix in egg, egg white, and vanilla; beat until fluffy. In a small bowl, blend bananas with buttermilk. Sift together flour, oats, baking soda, salt, and cinnamon; mix into butter mixture alternating with banana mixture. Stir in raisins. Pour batter into prepared pan.
  3. Bake for 50 to 60 minutes, or until done; cool for a few minutes before removing from pan.
