Golden Onions, Eggs, and Ham on Toast Recipe

  • 1 1/4 pounds red onions, thinly sliced
  • 2 tablespoons Lucerne Sweet Cream Butter or margarine
  • 3 ounces Canadian bacon, finely chopped
  • 6 O Organic Large Eggs, hard-cooked
  • 1/4 cup O Organics all-purpose flour
  • 1 cup chicken broth
  • 1 cup O Organics Low-Fat Milk
  • 1 cup shredded Safeway SELECT Primo Taglio Smoked Fontina Cheese
  • 3 tablespoons minced fresh chives, divided
  • 8 slices country-style bread, toasted
  • Salt and pepper
  1. In an 11- to 12-inch frying pan over medium-high heat, stir onions, butter, and bacon often until onions are limp and lightly browned, 10 to 15 minutes.
  2. Meanwhile, shell hard-cooked eggs and chop them. Set aside.
  3. Place flour in a small bowl. Add a little of the broth and mix to make a smooth paste. Then add paste to remaining broth and stir into onion mixture along with milk. Stir over medium heat until boiling, then stir about 2 minutes more.
  4. Add cheese and stir until smoothly melted. Add chopped eggs and 2 tablespoons chives and mix well.
  5. Arrange toast on 4 serving plates. Top equally with onion mixture and serve immediately. Sprinkle with remaining chives and season to taste with salt and pepper.
