- ½ packet gnocchi, cooked
- handful of rocket, finely chopped
- 1 lemon, zest and juice only
- 5-6 tbsp olive oil
- 55g/2oz parmesan, finely grated
- Stir together all the pesto ingredients.
- Add the gnocchi and stir to coat.
- Sprinkle over more parmesan and serve.
