Ginger sponge pudding Recipe

  • 55g/2oz self-raising flour
  • 55g/2oz butter, softened, plus extra for greasing
  • 55g/2oz caster sugar
  • 1 tbsp milk
  • 1 tbsp clear honey
  • 2.5cm/1in piece root ginger, peeled and finely grated
  • 1 free-range egg
  • Greek-style yoghurt, to serve
  1. Lightly grease a small microwave-proof bowl.
  2. Place all the ingredients except the egg and yoghurt into a food processor and blend to combine.
  3. Crack in the egg and pulse briefly to mix.
  4. Pour the mixture into the prepared bowl and microwave on high for 4-5 minutes, or until the pudding is set.
  5. To serve, turn the pudding out onto a plate. Serve in bowls with a dollop of yoghurt.
