- 55g/2oz self-raising flour
- 55g/2oz butter, softened, plus extra for greasing
- 55g/2oz caster sugar
- 1 tbsp milk
- 1 tbsp clear honey
- 2.5cm/1in piece root ginger, peeled and finely grated
- 1 free-range egg
- Greek-style yoghurt, to serve
- Lightly grease a small microwave-proof bowl.
- Place all the ingredients except the egg and yoghurt into a food processor and blend to combine.
- Crack in the egg and pulse briefly to mix.
- Pour the mixture into the prepared bowl and microwave on high for 4-5 minutes, or until the pudding is set.
- To serve, turn the pudding out onto a plate. Serve in bowls with a dollop of yoghurt.
